Balsamic Black Bean Salsa

I love Balsamic Vinegar. Pour it over tomatoes, mozzerella and basil for a simple salad, or make it into a sauce and pour over some noodles for this delicious dinner.....the possibilities are endless. The first time I made this salsa, I sat on the couch during naptime and ate almost the whole bowl, seriously! It is also very good on these tostados. I'm making this for a meeting at my son's preschool tonight. I'm excited to dig into it, honestly. Balsamic Black Bean Salsa

Four Packet Roast

I've made this roast a couple times, and have declared that this will be my roast recipe from now on. I like my roasts falling apart, so I like to cook it all day, but when cooked according to the recipe, it is still good. I had a couple of red potatoes and a sweet potato, so I cooked them up together for mashed potatoes. I made a simple gravy from the juice in the crockpot. I mixed some cornstarch and cold water together, then added it to the hot juice, and boiled it until it thickened. This makes for a wonderful Sunday Dinner, just add salad and some rolls.

Our Favorite Beef Tacos

I don't remember which blog I found these on, but I have made them at least twice a month since. I served these to missionaries one time, and they cleaned not only their plates, but the serving bowl the meat was in, and raved about how good these were. They claimed I could make these for them anytime I wanted. When we were on the Paleo diet, we ate this over salad, with a cilantro lime dressing, and it was still fantastic!

Chicken Tortilla Soup

I made this soup last night, and I was actually a bit surprised at how yummy it was. I was looking for a new Chicken Tortilla Soup recipe that wasn't made in the crockpot, since I didn't have enough time. There aren't many spices in this soup,and I realized after I had started that I didn't have any coriander,so I put in some seasoned salt, and then added some 'normal' chili powder, ontop of the ancho chili. I also used 'plain' paprika, instead of smoked, and left out the jalapeno for the kids. It was surprisingly very flavorful, and both my boys ate it up, which is always a struggle when I serve soup. I topped it with some yummy fresh salsa (pico de gallo style,)cheese and crushed chips.

Lion House Rolls

I made these rolls one day when I was feeling ambitous. Turns out they were pretty easy, as far as yeast breads go! I don't even remember what was for dinner when I made these, they are that good! The butter spread on them after they come out of the oven....Oh how I'm craving them now!

Split Pea Soup

I made this soup the other day, expecting to make PBJs for the kids, and probably Nathan. Much to my surprise, Nathan and Oakley both liked it! Enoch however did not, but he doesn't like any kind of soup. I've never made Split Pea Soup, or cooked with Barley, so this whole recipe was new to me. I didn't follow the recipe exactly. I skimped on the celery, onion and carrots; either because I didn't have enough, or thought it sounded like too much. I wish I would have added the full amount. I also was afraid that I'd have chunks of veggies, eventhough I diced them pretty small. The veggies all but melt away in the slow cooker. I ended up adding more garlic powder to make up the missing taste. Next time I will also chop the ham smaller so that I don't get a chunk of ham, but I'm not a big meat person. I served these in bread bowls, and it was so good at the end when the bread and the soup melded. MMMMM
